History & culture

Tteokgalbi shapes minced beef rib into patties, often on the bone, grilled with sweet soy glaze; the name refers to texture, not rice. Court stories describe minced galbi for easier eating, while Damyang claims a scholarly exile lineage and Gyeonggi recipes mixed pork after court cooks dispersed around 1910. The name spread from the late 1960s, and today the dish appears at hanjeongsik nationwide.

    Pat minced short rib very dry with paper towels; keep it cold so the patties bind well.
